I find these cookies to be the perfect treat when I need dessert in a pinch. Makes a decent amount of mini cookies, around 50, it mostly depends on how tiny you shape them. You can totally skip the marshmallow step & make them into mini chocolate chip cookies too!
Ingredients
| All Purpose Flour | 188 g |
| Corn Flour | 1 Teaspoon |
| Baking Soda | 0.5 Teaspoon |
| Table Salt | Pinch |
| Butter | 114 g |
| Brown Sugar | 165 g |
| Sugar | 67 g |
| Egg, Raw | 1 Egg |
| Vanilla Extract | 1 Tablespoon |
| Instant Coffee | 1 Teaspoon |
| Milk Chocolate | 135 g |
| Mini Marshmallows | 1 Cup |
Tips before you start
- Preheat the oven to 350°. Line a sheet pan with baking paper.
- Melt butter & allow to cool. (For a deeper flavor you can brown the butter!)
- If using a chocolate bar (I recommend Tony Chocoloney’s Milk Chocolate), chop up 135g into small chunks. If using chocolate chips, disregard this step.
Steps
- In a small bowl, mix together the flour, cornstarch, baking soda, and salt. Set aside.
- In a larger bowl, add in your cooled butter, brown sugar, granulated sugar, instant coffee, vanilla, and egg. Mix until well combined.
- To the large bowl, add in your pre-mixed dry ingredients & fold into the wet ingredients using a spatula. Make sure not to overmix, a few streaks of flour in this step is fine.
- Add your chocolate to the cookie dough & fold in with a spatula making sure no flour is visible. Don’t overmix!
- Start shaping your mini cookies, you can use 2 teaspoons to measure if you’re precise, I just eyeball it. Round the cookies out in your hands, flatten them out, add a mini marshmallow to the center, and roll the dough over the marshmallow making sure its fully covered & doesn’t peek through.
- Place cookies onto the lined baking sheet, ensuring to leave enough space for them to spread.
- Bake for 5 minutes, allow to cool, and enjoy! (Best paired with a cold glass of milk 🥛)
